I have a soft spot for sushi. You could wake me up for it in the middle of the night, and I wouldn't mind eating only sushi for the rest of my life. Almost always restaurants add sugar to sushi rice, but every now and then I still eat sushi out. I’ll accept the occasional rash I get from it that one time. But I never really understood why they add that sugar. I often make sushi at home and never add sugar; it’s just as delicious! This sushi salad, of course, contains no added sugar either.

Cook the sushi rice according to the instructions on the package.
Meanwhile, cut the salmon into small cubes and do the same with the avocado. When the rice is cooked, divide it over 2 plates. Top with the pieces of salmon, avocado and samphire, and cut the nori sheets into small pieces with scissors.
If you like, make a wasabi mayonnaise with some (sugar-free) mayonnaise and wasabi, then drizzle it over the salad.
Drizzle with some gluten-free tamari and your sushi salad is ready!
