Surf & Turf with prawns and steak

Surf & turf proves that more isn't always better, but the right combination makes all the difference. Juicy steak alongside garlic prawns with lemon butter: it's a classic luxury pairing you can easily serve at home. For the best result use a good frying pan with solid heat retention, because high, even heat is the secret here. Pair it if you like with cast-iron pans for an even more powerful sear on your meat.

How to make surf & turf with prawns and steak?

    1. Take the steaks out of the fridge at least 20 minutes before cooking so they come to room temperature. Pat them dry with paper towels and season generously with salt and pepper.
    2. Peel and devein the prawns. Toss them in a bowl with 1 tablespoon olive oil, 2 crushed cloves of garlic, a pinch of chili flakes and some salt. Let marinate for 10 minutes.
    3. Heat your frying pan over high heat until it's very hot. Add a drizzle of olive oil and sear the steaks 2 to 3 minutes per side for medium-rare, or a little longer to your liking. In the last minute add a knob of butter, a sprig of thyme and a crushed garlic clove. Continuously spoon the browned butter over the meat.
    4. Remove the steaks from the pan and place them on a plate to rest for 5 minutes. Loosely cover with aluminium foil.
    5. Lower the heat to medium. Cook the marinated prawns in the same pan, 1 to 2 minutes per side until they are pink and just cooked through. At the end add 15 g cold butter and a splash of lemon juice and stir briefly.
    6. Place the steak and prawns together on a warm plate. Garnish with freshly chopped parsley and a lemon wedge. Serve immediately with toasted bread or grilled vegetables.

The secret to a great surf & turf is timing and heat. Never cook your steak and prawns at the same time because prawns are done in two minutes and meat has its own rhythm. A pan that holds heat well really makes the difference here: you get that beautiful crust on the meat and the prawns cook evenly without becoming rubbery. Use the same pan for both and you'll get twice the flavor on one plate.

This dish is a real showstopper for a dinner party, but also perfect for a midweek evening when you want to treat yourself. Swap the prawns for langoustines or scallops for a different luxurious twist. A good frying pan is your most loyal kitchen companion here: choose one that will last for years and that works just as well on induction as on gas.
