Super quick spaghetti with sage butter, sun-dried tomato & white cheese

Here we go again: another pasta recipe. I honestly can't get enough of it — pasta is just so delicious and versatile. And secretly, it's also my ultimate fast comfort food, whenever I want to make something really tasty in a hurry, it's almost always a bowl of pasta.

Like the Italians, I'm absolutely not a fan of big chunks of vegetables in my sauce. I'd rather make a simple sauce and serve a bowl of salad on the side. What I am obsessed with, though, is cheese. Almost every variety makes my heart beat a little faster — I love it that much. For this recipe I used the white cheese from Apetina. I did use it a little differently than you might expect: instead of crumbling it over the dish, I let it melt down into a wonderfully rich little sauce. The cheese has a firm texture and a lovely savoury, salty flavour. Delicious over a salad, of course, but also absolutely perfect for cooking with. And the best part? Besides the block of white cheese, you barely need any other ingredients.

Spaghetti with sage butter, sun-dried tomato & white cheese

    1. Cook the spaghetti in plenty of water until al dente.

    2. Finely chop the garlic, cut the sun-dried tomatoes into strips, and roughly chop the sage.

    3. Heat a generous splash of olive oil in the frying pan and add the butter. Sauté the garlic for a minute, then add the sage. Fry briefly, then add the sun-dried tomatoes.

    4. Crumble the white cheese over the top and stir and press until it starts to melt.

    5. Finally, add the chilli powder and let the flavours meld together over low heat for a moment. Toss the spaghetti through at the end so it combines well with the sauce — and your dish is ready. Enjoy!

This dish is wonderful as a quick weeknight meal. Use wholegrain spaghetti if you prefer a more nutritious version. The combination of sage butter and white cheese gives a rich, full flavour without keeping you in the kitchen for long.

Want to give the dish a bit more of a kick? Simply add extra chilli powder to taste. A good heavy-bottomed frying pan ensures the sage and garlic cook evenly without burning.
