I've mentioned before that it can be tricky to find a healthy snack that's also easy to make and take with you. The recipe I previously posted for making energy bars from coconut and chia seeds has become incredibly popular. That shows how many people are looking for healthier alternatives to supermarket snacks. So here's another recipe for healthy snacks — Sugar-free Chocolate Energy Bar.

Pit the dates and cut each date into 4 pieces (this makes the food processor's job easier).
Put the nuts in the food processor first and grind finely. Then add the dates and the cocoa powder and pulse a little longer until you have a fine mixture.
Pour the mixture into a (square) baking pan or shallow dish lined with parchment paper. Press down firmly and make sure the edges are straight; this helps most energy bars turn out nicely rectangular.
Let firm up in the fridge for 30 minutes, then cut into pieces or bars. Store wrapped in aluminum foil; the bars will keep at least 4 days. Enjoy!
