These spelt cookies with goji berries came out of my oven last weekend. They're wonderfully crispy, entirely vegan since no egg is used, and they're also free from refined sugars. A strict tasting panel tried them and declared them delicious!

Mix the dry ingredients (spelt flour, rice flour, coconut sugar, goji berries, baking soda, baking powder) in a large bowl.
Meanwhile, melt the coconut oil.
Then mix the coconut oil, vanilla extract and water into the dry ingredients. Knead quickly into a smooth dough; add a little extra water if the dough remains too dry.
Cut out or shape the cookies and place them on a baking sheet lined with parchment paper.
Bake for about 13-16 minutes until nicely golden brown. Let them cool briefly outside the oven; they will become even crispier.
