  • 400 g raw shrimp, peeled and deveined
  • 3 garlic cloves, finely chopped
  • 2 cm fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tsp hoisin sauce
  • 1 lime (juice + wedges to serve)
  • 1 tbsp sesame oil
  • Chili flakes to taste
  • Salt and pepper
  • Fresh coriander and spring onion, for garnish

How do you make a quick spicy shrimp stir-fry with lime?

    1. Pat the shrimp dry with paper towels and season them with salt, pepper and a pinch of chili flakes.
    2. Heat a good glug of sesame oil in your wok or frying pan over high heat until the oil shimmers.
    3. Sauté the garlic and grated ginger for 30 seconds until fragrant. Stir constantly so they don't burn.
    4. Add the shrimp and cook 2 to 3 minutes per side until they're pink and just cooked through.
    5. Deglaze with soy sauce, a teaspoon of hoisin sauce and the juice of half a lime. Stir everything well and let it reduce for 1 minute.
    6. Remove the pan from the heat and transfer the shrimp to a plate or bowl. Garnish with fresh coriander, spring onion and lime wedges. Serve immediately.
