Equipment

  • Oven
  • Baking Tray
  • Parchment paper
  • Bread Knife
  • Tablespoon
  • Paper towels

Ingredients

  • 4 pistolets
  • 200 g ready-made pizza sauce from a jar
  • 1 ball of mozzarella (125 g)
  • 80 g salami, thinly sliced
  • 1 tsp dried oregano
  • 0.5 tsp black pepper, freshly ground
  • 10 g fresh basil leaves

How to make pizza rolls from pistolets?

    1. Preheat the oven to 220°C (conventional heat). A high temperature ensures the cheese melts quickly and browns lightly without the pistolets drying out.
    2. Slice the pistolets horizontally in half and place them cut-side up on a baking tray lined with parchment paper.
    3. Spoon a generous tablespoon of jarred pizza sauce onto each half and spread it to the edge. Don't use too thin a layer, otherwise the rolls will taste dry after baking.
    4. Distribute the salami slices over the rolls. Two to three slices per half pistolet is enough without making it too heavy.
    5. Pat the mozzarella dry with paper towels and tear it into pieces. Scatter it over the rolls. Mozzarella contains a lot of moisture that is released during baking. By drying it briefly you prevent a soft, soggy bottom.
    6. Sprinkle the dried oregano over the rolls and grind some black pepper on top.
    7. Slide the baking tray into the middle of the oven and bake the pizza rolls for 10 to 12 minutes. The cheese should be melted and slightly golden at the edges.
    8. Remove the rolls from the oven and let them rest for one minute so the sauce sets slightly. Then top with the fresh basil leaves and serve immediately.

Your choice of pistolet matters more than you think. A pistolet with a sturdy crust holds the sauce better and gets crispier in the oven. Soft bake-at-home rolls become soggier faster. Always pat the mozzarella dry before you put it on the roll, because mozzarella releases a lot of moisture during baking. Too much moisture makes the bottom soft instead of crispy. Bake the rolls on the middle rack so the top gratinates nicely without the bottom burning. Always let them rest for a minute after baking so the sauce sets slightly and you don't burn yourself.

Variations are endless. Skip the salami and use jarred roasted red peppers and black olives for a vegetarian version. Grated Gouda also works well if you don't have mozzarella at home, though the result will be slightly less gooey. If someone likes extra heat, add a few rings of fresh chili pepper to the roll before it goes in the oven. Store leftovers covered in the fridge and reheat them the next day in the oven at 180°C for about 5 minutes so the crust crisps up again. They become soft in the microwave, so prefer the oven.
