Overnight oats with chia seeds

You might have noticed that I’m obsessed with Overnight Oats. I’ve already posted two recipes before; one with blueberries and cinnamon and the other with chocolate. Yum. Even for these Overnight oats with chia seeds you’ll want to get out of bed in the morning. When I’m lying in bed at night and I know my little bowl of Overnight Oats is waiting in the fridge, I always sleep even better. Saying I sprint out of bed is a bit of an exaggeration, but having your breakfast ready in the morning is definitely a big plus.

  • 1 tablespoon cacao nibs
  • 1 teaspoon sunflower seeds

    1. Mix all the ingredients, except the banana and soy milk, in a large bowl.
    2. Add the mashed half banana and the soy milk, cover the bowl with aluminum foil and place it in the fridge.
    3. The next morning, take your bowl out of the fridge, stir well and finish with a topping of your choice (fresh fruit or some nuts).

Overnight oats are a delicious and nutritious breakfast you prepare the night before. The oats and chia seeds soak up the soy milk overnight, creating a creamy, filling texture. That way you’re ready the next morning with a healthy breakfast, no hassle.

Vary it to your taste by adding fresh seasonal fruit, a spoonful of peanut butter or a handful of nuts as a topping. The base of this recipe is easy to adapt to your personal preferences, so you can enjoy a surprising and tasty breakfast every morning.
