Separate the egg and set the yolk aside. Melt the coconut oil (or butter) and then mix it with the honey and the egg yolk. Squeeze the lemon and add the juice as well. You can also grate a little lemon zest—if you do, add it now.
Return to the heat and warm gently (do not boil). As you stir, the mixture will thicken. Once it has reached the right consistency, let it cool and place it in the refrigerator.
Put the oats, coconut oil, honey and dates in a food processor and grind until fine.
Divide this between 2 glasses and press down gently.
Whip the cream with the mascarpone and coconut blossom sugar until nice and thick. Spoon this over the glasses.
Then wash the lemons well and grate one lemon over the bowl (avoid the white pith).
Now chill in the fridge until you’re ready to serve. Finally, divide the lemon curd over the desserts. Enjoy!

This delicious dessert comes from Angelina’s blog, Peek Inside. The quantities and proportions have been slightly adjusted. This oatmeal dessert with lemon curd was on our Christmas menu. It was perfect because we could prepare the desserts earlier in the day. That saves a lot of time and stress in the evening. Which also makes it very handy when you have guests over and want to enjoy chatting with them.
This fresh dessert with a crunchy oat base, airy mascarpone filling and homemade lemon curd is a real treat. Make it in advance and keep it in the fridge until you’re ready to serve. That way you don’t have to worry about it once your guests are at the table.
