Honey spice loaf

Isn't that supermarket spice cake tasty?! Unfortunately, the ones from the supermarket aren't very healthy — they're full of refined sugar. So I looked for an alternative and came up with this honey spice loaf. It's a healthier version than the supermarket one, but it still contains a relatively large amount of unrefined sugar. So the same rule applies here: don't eat the whole loaf at once just because it's a healthier version ;-)!

Recipe

Honey spice loaf

This honey spice loaf is a healthier alternative to the standard spice cake. Made from ground oats and spelt flour, with honey, maple syrup and mixed spice for a rich, sweet flavour. It's easy to make, fills the house with a wonderful aroma while baking, and can be frozen for later. Optionally add raisins, nuts or seeds for extra flavour. A perfect treat for breakfast or as a healthy snack!

Equipment

  • Cake pan
  • Food processor

Ingredients

  • 200 g oats (finely ground)
  • 200 g spelt flour
  • 325 ml milk (I used lactose-free milk, but oat milk or almond milk also work)
  • 2 eggs
  • 3 tablespoons honey
  • 3 tablespoons maple syrup or agave syrup
  • 3 tablespoons mixed spice
  • 1 tablespoon cinnamon
  • 2 teaspoons baking powder
  • Pinch of salt

How to make honey spice loaf?

    1. Preheat the oven to 160°C.
    2. Grind the oats finely in a blender until they become flour.
    3. Grab a bowl and add all the other ingredients. Mix well.
    4. Then add the oat flour and mix well again.
    5. Grease a rectangular cakeblik or line it with parchment paper (the cake will come out more easily). Spoon the mixture into the pan and sprinkle a little extra mixed spice on top.
    6. Place the spice loaf in the oven and bake for about 1 hour. Check after 50 minutes to see how it's doing — insert a skewer to see if the mixture is 'dry'. If batter still sticks, the cake needs a little longer.
    7. Then let it cool (if you can wait that long — your house smells amazing!) and slice. If you don't expect to eat the cake within a few days, freeze a few slices wrapped in aluminium foil so you always have a healthy snack on hand or something to take along.
    8. Serve on small plates (gebaksbordjes). A cup of tea or coffee with it?

This honey spice loaf is a wonderfully healthy snack that you can easily make with a food processor and a mixing bowl. Thanks to the combination of spelt flour, oats and natural sweeteners like honey and maple syrup, it's a responsible treat for young and old. Bake a big batch and freeze slices so you always have a snack on hand.

Serve the spice loaf on a small plate with a cup of tea or coffee. The warm aroma of mixed spice and cinnamon makes this recipe perfect for a cozy moment. Store the cake well wrapped in aluminium foil in the freezer so you can enjoy it anytime.
