Sometimes breakfast is simply too good to skip. This recipe proves that with a few fresh vegetables, eggs and feta you can quickly put something on the table you'll really enjoy. The vegetables are briefly roasted in the pan, the eggs go on top and in a few minutes you have a colorful plate in front of you. Warm, filling and fuss-free.

Fried eggs with roasted vegetables and feta

Roasted red pepper, zucchini and cherry tomatoes with gently fried eggs and crumbled feta. This breakfast is hearty, flavorful and ready in twenty minutes.

Ingredients

  • 4 eggs
  • 1 red bell pepper
  • 1 small zucchini
  • 150 g cherry tomatoes
  • 80 g feta
  • 2 tbsp olive oil
  • Pinch of cumin
  • Salt and black pepper to taste
  • Handful of fresh parsley
  • Good bread to serve alongside

How to make fried eggs with roasted vegetables and feta?

    1. Cut the red bell pepper into thin strips, slice the zucchini into half-moons and halve the cherry tomatoes.
    2. Heat a splash of olive oil in a large frying pan over medium heat. Add the bell pepper and zucchini and cook for 5 to 6 minutes until soft and lightly golden.
    3. Add the cherry tomatoes and cook another 2 minutes. Season with salt, pepper and a pinch of cumin.
    4. Use a spoon to make four wells in the vegetables and crack an egg into each well. Put a lid on the pan and let the eggs cook for 3 to 4 minutes until the whites are set but the yolks are still soft.
    5. Crumble the feta generously over the top. Sprinkle with fresh parsley and serve straight from the pan with good bread on the side.

A good frying pan really makes this recipe easier. With a pan that distributes heat evenly, the vegetables cook through nicely without anything burning. And with a well-fitting lid the eggs cook just as they should: whites set, yolk still soft.

Feel free to vary the vegetables you have in the fridge. Spinach, mushrooms or sun-dried tomatoes also work excellently. And for a spicier version: a generous pinch of chili flakes and your day starts immediately with a wink.
