Equipment

  • Baking Tray
  • Baking paper
  • Bread Knife
  • Small bowl
  • Garlic press
  • Knife
  • Serving board

Ingredients

  • 1 baguette (about 250 g)
  • 100 g unsalted butter, at room temperature
  • 4 garlic cloves
  • 3 tbsp fresh parsley, finely chopped
  • 1 tsp coarse sea salt
  • 1/2 tsp freshly ground black pepper

How to make garlic bread pieces for drinks?

    1. Preheat the oven to 200°C (180°C fan). A well-preheated oven is important: the bread needs to start toasting immediately, otherwise it will dry out without turning crispy.
    2. Cut the baguette on the diagonal into slices about 1.5 cm thick. Diagonal slicing gives more surface area per slice, which means more crispy edge on each piece.
    3. Press or finely grate the garlic cloves and mix them into the softened butter. Add the chopped parsley, a pinch of salt and freshly ground black pepper. Stir until everything is evenly distributed. Soft butter mixes more easily and sticks better to the bread than melted butter.
    4. Spread each baguette slice generously on one side with the garlic butter. Don't be stingy: the butter soaks into the bread and provides the flavor and golden crust.
    5. Place the slices butter-side up on a baking tray lined with baking paper. Make sure they don't overlap, otherwise they'll steam and soften instead of becoming crispy.
    6. Put the baking tray in the preheated oven and bake the pieces for 10 to 12 minutes, until the edges are golden and crispy and the butter has fully soaked into the bread.
    7. Want them extra crisp? Switch the oven to the grill/broiler setting for the last 2 minutes and watch them closely. The difference between golden and burnt is small under high grill heat.
    8. Remove the pieces from the oven and immediately sprinkle them with coarse sea salt and, if you like, a little extra parsley. Serve them straight away on a wooden serving board so everyone can reach them easily.

The quality of your bread makes a big difference. Choose a baguette from the same day, preferably with a firm crust. Older bread crisps up faster but can be dry inside; fresh bread keeps a soft interior with a crunchy edge. For the garlic butter: always use fresh garlic. Garlic powder gives a very different, flatter flavor. Want a milder aroma? Sauté the garlic briefly in a little butter over low heat first, let cool and then mix into the rest of the butter. That gives a rounder, sweeter garlic flavor without the sharp edge.

There are plenty of variations. Add a handful of grated Parmesan to the garlic butter for a savory, cheesy crust. Or mix in some chili flakes if you like a bit of heat. You can also make the garlic butter a day ahead and keep it in the fridge to save time when guests arrive. Have leftovers? Wrap them loosely in aluminum foil and warm them for 5 minutes the next day in a 180°C oven. They will never be as crispy as fresh, but they’re still fine with soup or for lunch.
