Christmas mugcake with coconut flakes and red berries

Merry Christmas! For when you fancy a spectacular Christmas breakfast this morning but don't want to put in too much effort, this mugcake is perfect. The idea is that you put all the ingredients in a mug, pop it in the microwave and after a minute – like magic! – you pull out a little cake. Really? Yes! Give it a try =) The recipe came from Two Chicks; that's egg whites in a bottle. For this recipe you don't need the egg yolks, and it would be a shame to throw them away. Did you know this is also widely used in the catering industry?

Christmas mugcake with coconut flakes and red berries

Mix the almond milk and cocoa powder into a smooth paste. Then add the granulated sugar, the coconut flakes, the self-raising flour and the egg whites. Keep stirring until a smooth batter forms. Take one of your nicest Christmas mugs and fill the mug halfway with the cocoa mixture. Microwave for 1 minute. Don't be afraid if it rises above the rim; that's the point. Top with coconut flakes and red berries. Merry Christmas breakfast!

This mug cake is perfect for a festive Christmas breakfast or as a quick dessert. Use a large mug so the cake has enough room to rise while baking in the microwave.

Generously top the mug cake with coconut flakes and fresh red berries for a cheerful, festive result. Serve immediately after baking for the best flavour experience.
