How to make sizzling bodega-style tapas?

    1. Start with the patatas bravas. Cut the potatoes into large cubes and parboil them for 8 minutes in salted water. Drain well and pat dry with kitchen paper.
    2. Heat a generous layer of olive oil in a frying pan over high heat. Fry the potato cubes in batches until golden brown and crispy, about 8–10 minutes per batch. Drain on kitchen paper and sprinkle with sea salt.
    3. Make the bravas sauce: stir together the smoked paprika, tomato paste, a splash of vinegar and a pinch of cayenne. Warm briefly in a small pan and set aside.
    4. For the gambas, heat a splash of olive oil in a small frying pan. Add the finely chopped garlic and a pinch of chili flakes and cook for 30 seconds over medium-high heat. Add the gambas and cook 2 minutes per side until nicely pink. Deglaze with a splash of dry white wine and sprinkle with freshly chopped parsley.
    5. Slice the chorizo into about 5 mm rounds. Heat a dry frying pan over medium-high heat and fry the chorizo 2 minutes on each side until the fat renders and the edges are lightly crisp. Add the red wine and let it reduce for 3 minutes until a glossy sauce forms.
    6. Cut the manchego into thin slices or small cubes. Arrange on a dish, drizzle with runny honey and scatter some broken walnuts on top.
    7. Divide all the tapas among the bowls on the serving set. Serve the bravas sauce on the side for the potatoes. Garnish the gambas with a lemon wedge. Put everything on the table, offer cold beer or a glass of dry sherry, and enjoy.

The nice thing about tapas is that you can easily scale the quantities up or down. Cooking for six? Just double the gambas and the chorizo. Want to keep it lighter? Leave out the potatoes and add grilled vegetables. This recipe is a starting point, not a rulebook. Make it your own bodega night.

A nice serving set makes the difference between plopping a bowl down and really dining. When everything looks attractive, it tastes better too. Choose a set that combines wood and porcelain for that warm, Mediterranean vibe. That way you aren't just putting food on the table, you're creating a moment.
