Best toastie ever: the Croque Foodporn with cheese & truffle

I don't throw around phrases like 'the best dish ever' lightly. I mean, taste is always up for debate and there are so many delicious things in the world. But THIS time I've actually found something. In the 4 days since I discovered this recipe, I've already made it for two people — purely because I want everyone to taste it, because it's so ridiculously good you'll never want anything else. Well, almost never 😉

The great thing about being friends with talented chefs is that they occasionally — often — come up with brilliant ideas. This toastie is one of them (because that's what a croque is: a toastie fried in the pan), and yes, it was invented by a chef. I'm not going to take the credit, so I'm giving them a shoutout 😉 What I will do is share the recipe, because you REALLY need to make this. I went with bread from Vlaamsch Broodhuys again, but any bread will do. Though I'd go for sourdough — it has a lovely sturdy texture.

Equipment

  • Small saucepan
  • Frying pan

Ingredients

  • 2 slices of sourdough bread
  • 1 tbsp truffle mayonnaise (Jean Baton's is the bomb)
  • 1/2 tsp smoked paprika
  • 1 egg
  • 5 slices of (mature) cheese
  • Butter
  • Olive oil
  • Freshly ground pepper & salt

toastie: the Croque Foodporn with cheese & truffle

Boil the egg for 6–7 minutes — it can be fully hard-boiled. Spread a generous layer of truffle mayo on a slice of bread and lay the cheese slices on top. Peel the egg, cut it into pieces and distribute over the cheese.

Now sprinkle over the pepper, salt and paprika. Make sure you use the smoked variety — it gives a really special (and seriously delicious) flavour.

Heat the oil in a frying pan over medium heat and let the butter melt in alongside it. Place the croque in the pan and cook for about 2–3 minutes. Flip it over and cook for the same amount of time. Keep an eye on it so it doesn't burn — you really don't want that 😉 Better to keep the heat a little lower and have a bit more patience than to rush it and end up with a scorched sandwich. Also learned that one from a chef 😉

Preferably use a sturdy frying pan with a thick base, so the heat distributes evenly and your toastie turns a beautiful golden brown without burning.

Serve the croque straight from the pan — it's at its absolute best when hot. A crisp salad or a few gherkins on the side make it complete.
