Skip the greasy pork sausages, get a little creative in the kitchen, and with not much effort you'll make the BBQ healthier than you might think. In recent weeks I've posted several gluten-free recipes, and today here's another tasty one: BBQ chicken skewers with homemade peanut sauce.

BBQ chicken skewers with homemade peanut sauce

Healthy eating works great on the BBQ. Especially with these skewers you make entirely yourself from pure ingredients — even the peanut sauce.

Ingredients

  • 300 g chicken breast
  • a splash of olive oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon tamari (gluten-free soy sauce)
  • 150 ml coconut milk
  • 2 shallots
  • 2 tablespoons peanut butter
  • half a red chili

BBQ chicken skewers with homemade peanut sauce

    1. Cut the chicken breast into large cubes and marinate them for about half an hour (longer is fine) in a mixture of olive oil, cumin seeds and tamari. Then thread them onto a large wooden skewer.
    2. Finely chop the shallots and the red chili and sauté them in a steelpannetje. Add the coconut milk and two tablespoons of peanut butter and stir well.
    3. Once it becomes a smooth sauce, it's ready. If the sauce is too thin, add a little more peanut butter (a teaspoon at a time), or a bit more coconut milk if the mixture stays too thick. You can always stir in a little sambal if you like a nicely spicy peanut sauce.
    4. Place the chicken skewers on the BBQ and let them cook for 10–15 minutes. Serve with your homemade peanut sauce — enjoy!
