Equipment

  • Bundt pan about 25 cm in diameter Mixer (hand mixer or stand mixer)
  • Mixer (hand mixer or stand mixer)
  • Large mixing bowl
  • Sieve (for flour and baking powder)
  • Spatula (to fold the batter lightly)
  • Paring knife and cutting board (for the apples)
  • Measuring spoon or teaspoon (for salt and baking powder)
  • Scale (for the ingredients)
  • Wire rack (to cool the cake on)
  • Skewer (to test if the cake is done)
  • (optional) Baking spray or butter and a strip of baking paper for greasing the pan
  • (optional) Small sieve to dust powdered sugar over the cooled cake

Ingredients

  • 250 g sugar
  • 250 g butter (at room temperature)
  • 1 tsp vanilla extract and/or zest of 1 lemon
  • ¼ tsp salt
  • 5 eggs (at room temperature)
  • 250 g flour
  • 2 tsp baking powder
  • 2 apples (e.g., Jonagold or Elstar)
  • (optional) Icing sugar for dusting
  • (optional) Whipped cream or vanilla ice cream to serve

Make an airy bundt apple cake

    1. Preheat the oven to 160 °C (top and bottom heat).
    2. Grease your pan, then dust it with a little flour. This prevents the cake from sticking to the pan.
    3. Place the butter, sugar, vanilla extract (and optional lemon zest) and the salt in a large bowl.
    4. Beat this with a (hand) mixer for about 5 minutes until light and creamy.
    5. Then add the eggs one at a time and beat until you have a smooth, airy batter. Add the next egg only once the previous one is fully incorporated.
    6. Sift the flour and baking powder over the bowl and gently fold into the batter. Don’t overmix, so your cake stays nice and airy.
    7. Peel the apples, remove the core and cut into small cubes. Toss the apple pieces with a little flour so they don’t sink to the bottom of the batter. Then fold them into the batter so they’re evenly distributed.
    8. Pour the batter into your bundt pan and smooth the top.
    9. Bake the cake in the middle of the oven for about 60 minutes until golden brown and cooked through.
    10. Check with a skewer: if it comes out clean, your cake is perfect!
    11. Let the cake cool in the pan for 10 minutes, then carefully invert it onto a wire rack. Let it cool completely on the rack.
    12. Dust the cake generously with powdered sugar for a festive look. Serve with a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence.

This airy bundt apple cake is lovely on its own, but becomes even more festive with a generous dusting of powdered sugar. Serve warm or at room temperature, optionally with a dollop of whipped cream or a scoop of vanilla ice cream. The cake keeps well in an airtight container and is just as delicious the next day.

Preferably use firm, slightly tart apples such as Jonagold or Elstar. By lightly dusting the apple cubes with flour first they stay evenly distributed through the batter and won’t sink to the bottom. Make sure the butter and eggs are at room temperature for the best, airy result.
