Ingredientes

  • 80 g oats (fine or coarse, to preference)
  • 1 tbsp chia seeds
  • 200 ml coconut milk
  • 100 g Greek yogurt
  • 1 tbsp honey
  • 1 ripe mango
  • 2 tbsp coconut flakes
  • Zest of 1/2 lime (optional)

How do you make overnight oats with mango and coconut?

    1. Put the oats, chia seeds, coconut milk, yogurt and honey into a bowl or jar. Stir everything well.
    2. Cover the bowl or jar and place it in the refrigerator for at least 6 hours, or simply overnight.
    3. Cut the mango into cubes the next morning. Use a sharp knife and a sturdy cutting board for ease.
    4. Toast the coconut flakes briefly in a dry frying pan over medium heat. Keep an eye on the pan because coconut burns quickly. Remove the pan from the heat as soon as the flakes turn light golden.
    5. Take the overnight oats out of the fridge and give them a stir. Too thick? Add a splash of extra coconut milk and stir again.
    6. Spoon the oats into a nice bowl or glass, top with the mango cubes and sprinkle with the toasted coconut flakes.
    7. Optionally grate a little lime zest over it for a fresh touch and serve immediately.

Overnight oats are endlessly adaptable. Swap the mango for blueberries, strawberries or banana. Add a spoonful of peanut butter for extra staying power, or sprinkle some crunchy granola on top for bite. The base recipe stays the same, the flavors are different every morning.

A good bowl or resealable jar makes a difference: tidy in the fridge and ready to take with you. Good servingware doesn't have to be complicated, as long as it feels nice in the hand and looks appetizing on the table.
