The Kiritsuke is the silent hero of Japanese cuisine. Classically speaking, it is the master chef's knife—demanding to use, but rewarding in results. How should I best care for the Yaxell Kiritsukemes Zen 20 cm?
A knife with 60-62 HRC hardness deserves good care — that keeps that exceptional edge as long as possible. Do this: • Wash it by hand in warm water with a mild dish soap, immediately after use. Dry it right away with a dry cloth. • Sharpen it regularly with a whetstone or a ceramic sharpening rod suitable for Japanese knives. The more often you do this, the less work it takes. • Store it safely on a magnetic knife strip or in a knife block — tossing it loose in a drawer will throw the blade out of balance. • Use a soft cutting board made of wood or plastic. Glass, stone, or ceramic will damage the blade. The canvas Micarta handle is robust and moisture-tolerant, but it will also stay looking better if you don't soak it for long periods.
Can I wash this knife in the dishwasher?
No, the dishwasher is not a good idea for this knife. The aggressive detergents, high temperatures and the clashing against other utensils damage both the damascus steel blade and the canvas Micarta handle. Damascus steel is sensitive to prolonged moisture and caustic substances — you'll notice this as rust and a dull blade. Hand-washing with warm water and a mild dish soap, followed by immediate drying, is the only proper way to clean this knife.
Is the Kiritsuke also suitable if I don't cook Asian dishes?
Absolutely. While the Kiritsuke is deeply rooted in Japanese cuisine, its flat, straight blade and elegant tip make it a serious workhorse outside the Asian kitchen as well. Think of: • Carpaccio — thin, even slices of meat or fish are cut with surgical precision by this knife. • Finely sliced vegetables — julienne, brunoise, or paper-thin slices: the flat Nakiri-style blade is perfect for that. • Portioning fillets — the tip and the long blade give you control that a standard chef's knife doesn't. What's the difference between this knife and a regular chef's knife?
