Can I clean these knives in the dishwasher?

No, we advise against it. Hand washing is the recommended way to clean these knives. Rinse them with warm water and a mild dish soap, and then dry them immediately and thoroughly. That preserves the sharpness of the Japans 440C staal and keeps the knives looking good for a long time. The dishwasher can damage the blade and the handle, and that would be a shame for such a solid set.

How do I keep the knives sharp?

With a cutting angle of 18 degrees and a blade thickness of 2 mm these knives are already excellently sharpened out of the box. To maintain that sharpness, do the following: • Use a honing steel or sharpening stone suitable for knives with an Asian edge angle (around 15–20 degrees). • Store the knives in the supplied luxe houten kist — that protects the cutting edge better than a drawer. • Preferably cut on a wooden or plastic cutting board, not on stone or glass. The 58 Rockwell steel is wear-resistant, but good maintenance makes a noticeable difference in daily use.
