Which size frying pan?

How do you measure the size of your frying pan?

The size a frying pan is sold by is measured at the top, from rim to rim. Get a ruler or tape measure ready and do the following with your current pan:

  1. First check whether a size is marked on the bottom: better pans often have their diameter there, along with symbols for the heat sources they're compatible with.
  2. If there's nothing, place the ruler across the top of the pan, exactly through the middle.
  3. Then measure the base on the underside: the flat part that rests on the hob. That number will be a few centimetres smaller, and it's the width you actually cook on and that determines how the pan sits on your cooking zone.

For a new lid you need the size of the top: the replacement pan lids use that size in their name.

How do you measure the size of your frying pan?

How big should a frying pan be for your household?

The number of people per size is only a guideline: for a 28 cm pan our product texts, depending on the brand, state anywhere from two to six people. What fits in the pan at once scales with the size:

  • Someone cooking for themselves can fry an omelette, one or two eggs, or a single piece of fish or meat in a 20 cm pan. According to our pan expert, that size is too small for three hamburgers.
  • A small household can cook three fried eggs for breakfast or two small steaks side by side in a 24 cm pan.
  • A family can cook four substantial schnitzels or a large pancake that fills the base in a 28 cm pan.
  • A large family can cook for everyone at once in a 30 or 32 cm pan, so no one has to wait for a second round.

When choosing, base it on an ordinary weeknight: if guests arrive occasionally, your everyday pan doesn't have to be one size larger for that.

How big should a frying pan be for your household?

Does every 28 cm pan have the same amount of space on the base?

A 26 cm frying pan can have a larger base than a 28 cm one. The Blackwell Koekenpan Carbon Staal ø 26 cm has a base of 20.5 cm, almost a centimeter more than the SCANPAN Koekenpan CTX ø 28 cm. Between two 28 cm pans the difference can be even greater. The base of the Blackwell Koekenpan Carbon Staal ø 28 cm is 3.4 cm wider than that of the SCANPAN.

Such a difference can come from the wall: if it slopes, there's less flat surface at the bottom than with a wall that rises steeply. In the specifications of some of our frying pans the width of the base is called "Base diameter". If you want to cook a lot at once without moving up a size, compare pans by that base measurement.

How much heavier does a frying pan get if you choose one size up?

A size up makes a frying pan heavier, but material can matter more than the size. For example, a 28 cm ceramic pan in our selection is lighter than a 24 cm De Buyer steel pan. Empty, such a ceramic pan weighs 0.89 to 1.4 kilos, and a 24 cm De Buyer 1.42 to 1.49 kilos.

A pan weighs even more when full. If you can't lift it easily with one hand, our pan expert recommends a counter-handle: a short handle opposite the main handle. From 24 cm upward some of our pans include such a handle.

Does every 28 cm pan have the same amount of space on the base?

Will a larger pan heat evenly on induction?

If you choose a larger size for induction, it will usually also have a wider base on the same zone. If that base overhangs the zone significantly, you're effectively cooking in a smaller pan than you bought: the outer centimeters become less hot. Take the measurements of your zones with you to the frying pans for induction, and choose a pan for each zone. According to our pan expert, a gas stove can handle any size.

Which sizes should you combine when you buy two frying pans?

Our pan expert pairs a small pan with a large one, or a medium with a large. While the meat is in the large pan, you fry mushrooms or an egg in the small one. That way neither pan has to be so heavy you can barely lift it.

Of our frying pan sets, almost every set combines the sizes 24 and 28 cm. If you want a small one as well, there are also three-piece sets from 20 to 28 cm. If you already have a 24 or 28 cm pan, you can buy the other size separately.

What frying pan sizes are available?

In our range, base diameter and weight increase by size as follows, for the pans whose specs list them:

  • A 20 cm pan has a base of 13.5 to 16 cm and weighs empty 0.54 to 1.1 kilos. You can choose one from the 20 cm frying pans.
  • A 24 cm pan sits on a base of 16.3 to 18.6 cm, with an empty weight of 0.7 to 1.67 kilos. You can find it among the 24 cm frying pans.
  • A 26 cm pan has a base of 18 to 20.5 cm and weighs empty 0.7 to 2.02 kilos. You can look for it among all frying pans, using the diameter filter.
  • A 28 cm pan has a base of 19.6 to 23 cm. Empty it weighs 0.89 to 2.3 kilos, and you can choose it from the 28 cm frying pans.
  • A 30 or 32 cm pan sits on a base of 22.5 to 26 cm and weighs empty 1.5 to 2.98 kilos. You can find those among the frying pans from 30 cm.

Individual pans of 22, 25 and 25.5 cm can be found the same way as 26 cm ones. Smaller than 20 cm there are pans of 16 and 18 cm, together with 20 cm ones in the small frying pans. In 20, 24 and 28 cm sizes we offer the most choice.
