Caveman Style Ribeye

On this How To page, you will make the Caveman Style Ribeye.

Supplies

  • 1 ribeye steak, 4-6 cm thick
  • Coarse sea salt
  • Freshly ground black pepper (preferably only after cooking)
  • Hard charcoal or a mix of charcoal and wood

Optional:

  • Butter
  • Garlic
  • Rosemary

Preparation

Remove the ribeye from the refrigerator 1 to 2 hours before preparation.

  • Pat the meat dry thoroughly with paper towels.
  • Season generously all around with coarse sea salt.
  • Preferably, let the ribeye rest uncovered so that the outside can dry out.
  • Optionally, add pepper only after cooking, as pepper can burn at extremely high heat.

A dry exterior makes for a better crust.

Preparation

Barbecue setup

For caveman style, you do not use a grate. The meat goes directly onto the glowing coals. Preferably use:

  • Hard charcoal (for example oak or quebracho)
  • Optionally some glowing wood for extra smoke
  • Make a large, even bed of coals. You want a very hot surface:

  • Coal surface: approximately 250 - 300°C
  • Hand test 10 cm above the coals:

1-2 seconds: perfectly hot for caveman style
3-4 seconds: hot, but less aggressive
5 seconds or longer: too cool

Wait until the coals are mostly gray with a red glow underneath.

Barbecue setup

First phase: forming a crust

Place the ribeye directly on the coals.

  • Do not use oil.
  • Do not use a grill.
  • Turn the steak with BBQ tongs.

Guideline:

  • 2-3 minutes per side
  • You are looking for:
  • A dark, crispy crust
  • A deep roasted aroma
  • Beautifully melted fat on the outside
First phase: forming a crust

Continue cooking and check temperature

Once the first crust has formed, move the ribeye to a slightly cooler spot or indirect heat to finish cooking slowly.
Use a BBQ thermometer.

Measure:

  • From the side
  • In the thickest part
  • Do not touch bone or large pieces of fat

Ribeye core temperatures

Rare

  • Remove from the coals: 45-47°C
  • After resting: 48-50°C

Medium rare (recommended)

  • Remove from the coals: 50-52°C
  • After resting: 53-55°C

For a perfect caveman ribeye:

  • Remove from the heat at 52°C.
  • Let it rest for 8-10 minutes.
  • Final temperature approximately 54°C.

Continue cooking and check temperature

Rest

Place the ribeye on a cutting board after cooking.

  • Let it rest for 8-10 minutes.
  • Optionally, cover loosely with aluminum foil.

During resting, the juices redistribute throughout the meat and the temperature rises slightly more.

Serve

Slice the ribeye:
across the grain
Into nice slices

Finish with, if desired:
freshly ground black pepper
coarse sea salt
a small knob of butter

Extra tips

For a thick ribeye of 5-6 cm:
2-3 minutes directly on the coals per side
then continue cooking indirectly until 52°C

For a thinner ribeye of 2-3 cm:
can be cooked entirely directly on the coals
approximately 2-3 minutes per side

Extra smoke:
Add a small piece of oak or cherry wood to the coals just before placing the steak on them. The secret to caveman style is simple: extreme heat, minimal handling, and controlling the internal temperature.
