Classic & Simple, white asparagus with egg

    Preparation

    1. Boil the eggs
Boil the eggs for about 8 minutes until hard. Shock in cold water, peel and roughly mash.
    2. Prepare the asparagus
Carefully peel the asparagus from just below the tip downwards and trim off the woody ends.
    3. Cook the asparagus
Cook the asparagus preferably upright, in an asparagus pan with water and a pinch of salt.
Cook them for about 7–10 minutes until tender and then let them rest in the hot water for a short while.
    4. Make the butter sauce
Melt the butter in a small pan and season with salt and pepper.
    5. Serve
Place the asparagus on a platter, distribute the egg over them and pour the melted butter on top.
Garnish with some parsley if desired.

This classic asparagus recipe is a true Dutch tradition. With a few simple ingredients you can create an elegant dish that is perfect for asparagus season. Serve with some fresh bread for a complete meal.

An asparagus pan ensures the spears can cook upright so the tips stay tender while the stalks become cooked. Use a vegetable peeler for a neat and careful preparation of the asparagus.
