And my favourite dessert is one that's a little bit easy to make. Preferably made earlier in the day. If you're having guests, you also want time to chat. This delicious dessert, a trifle with whipped cream, red fruit and gluten-free cookies, you can simply make in the afternoon and pull out of the fridge to serve in the evening!

Trifle with whipped cream, red fruit and gluten-free cookies is a quick and festive dessert, perfect for a dinner party. Layers of whipped cream and mascarpone alternate with crumbled gluten-free cookies and fresh red fruit such as blueberries, raspberries and blackberries. The whole is assembled in glasses and garnished with extra fruit and cookie crumbs for a beautiful and tasty result.

Ingredients

  • 250 ml whipping cream
  • 2 tablespoons mascarpone
  • 5 to 6 cookies (depending on size)
  • 2 handfuls of red fruit, e.g. blueberries, raspberries and blackberries
  • 1 tablespoon (coconut blossom) sugar

How do you make a trifle with whipped cream, red fruit and gluten-free cookies?

    1. Whip the cream with the tablespoon of (coconut blossom) sugar. At the end, briefly fold in the mascarpone.
    2. Crumble the gluten-free cookies.
    3. Divide some whipped cream between two glasses to form a base. On top of that, add a layer of cookie crumbs.
    4. Top that with more whipped cream, then add a layer of fresh fruit. Keep a small amount aside for the garnish. Finish with another layer of whipped cream and garnish with some cookie pieces and fruit. Enjoy!
