This stack of pancakes with figs, honey and pecans makes me happy! They're also lactose- and gluten-free and contain only natural sugars.

Equipment

  • Immersion blender
  • Bowl
  • Pancake pan
  • Cutting board
  • Knife

Ingredients

  • 175 g gluten-free oats
  • 200 ml soy or almond milk
  • 1 banana
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons (gluten-free) baking powder
  • 1 egg
  • 2 figs
  • 20 g pecans (toasted 5 minutes at 180°C)
  • Coconut oil (or butter) for frying

Stack of pancakes

    1. Put all the ingredients (except the egg, the coconut oil, the figs and the nuts) into a bowl and blend with a blender or an immersion blender until you have a smooth batter.
    2. Add the egg and mix for about ten seconds until the egg is fully incorporated.
    3. Heat a frying pan with one to two tablespoons of coconut oil. When the pan is hot, pour the batter into small rounds and cook 2–3 minutes per side until golden brown.
    4. Cut the fig into wedges and arrange them with the pecans on the pancake stack. Finish with a generous tablespoon of honey.
    5. Enjoy!

This gluten-free stack of pancakes is a delicious and nourishing breakfast. Thanks to the oats and banana, they're naturally sweet and filling without needing flour.

Serve the pancakes straight away with fresh figs, crunchy pecans and a generous spoonful of honey. It's the tastiest way to start the day!
