Cut the zucchini, bell pepper and red onion into thin strips or evenly sized cubes so everything cooks evenly.
Heat a drizzle of olive oil in a grill pan or frying pan over high heat. Add the vegetables and cook for 5 to 6 minutes, until they’re tender and lightly browned at the edges. Season with salt, pepper and a pinch of cumin.
Warm the wraps briefly in a dry frying pan (30 seconds per side) or 20 seconds in the microwave, wrapped in a damp paper towel.
Spread a generous layer of hummus on each wrap. Divide the roasted vegetables over them and crumble the feta on top.
Add a handful of arugula and grate some lemon zest over for a fresh touch. Roll the wrap tightly, cut it diagonally in half and serve immediately.
