I love nothing more than getting a quick meal on the table after a long day at work, as long as it’s healthy and gluten-free. The rice noodles only need about 4 minutes to cook and the salmon is done in 6–8 minutes, so your meal is on the table in no time. Ideal, right?

Ingredients

  • 2 salmon fillets (plain)
  • 250 g rice noodles
  • 100 g samphire
  • 2 nori sheets
  • 1 lemon
  • 1 tablespoon sesame seeds
  • 1 teaspoon dried dill (or a few sprigs of fresh dill)
  • 1 tablespoon sesame oil
  • 1 tablespoon tamari (gluten-free soy sauce)

Rice Noodles with Salmon

    1. Bring water to a boil.
    2. In a thin layer of olive or coconut oil, fry the two salmon fillets until cooked through, about 6–8 minutes. Two minutes before they’re done, sprinkle some sesame seeds over the fillets and add a little sesame oil and dill.
    3. Put the rice noodles into the boiling water and cook for about 4–5 minutes. Meanwhile, cut the nori sheets into small pieces. Place the rice noodles on a plate and drizzle with some tamari and sesame oil.
    4. Place half the samphire on each plate; you don’t need to cook it. Scatter the nori over the samphire. Spoon a salmon fillet onto each plate and drizzle everything with a little lemon juice and a small amount of tamari. Enjoy!

This dish is gluten-free thanks to the tamari and the rice noodles. Samphire is nicely crunchy and doesn’t need to be cooked, which makes the dish quick and simple.

The combination of sesame oil, dill and lemon juice gives the salmon a bright, full flavor. Serve immediately after cooking for the best result.
