With only 7 ingredients you can have this delicious quiche with spinach and feta on the table in no time. This tasty quiche is also vegetarian, thanks to the use of vegetarian chicken pieces. If you're not a fan of these veggie chicken pieces, you can of course leave them out. You can also replace them with, for example, cashews, or with extra vegetables like courgette or leek. That way you can make this quiche completely to your taste and preference!

A savory quiche filled with spinach, feta and vegetarian chicken pieces. Easy to make and perfect for a weeknight meal or a festive lunch.

  • 500 g spinach
  • 5 eggs
  • 150 g feta
  • 175 g vegetarian chicken pieces
  • 1 red bell pepper
  • 125 ml crème fraîche
  • 1 roll savory tart dough or 7-8 sheets puff pastry

Quiche with spinach and feta

    How to make a quiche with spinach and feta?

    1. Preheat the oven to 180°C.
    2. Let the tart dough (or puff pastry) come to room temperature so it's easier to work with.
    3. Cut the bell pepper into cubes. Heat some oil in a pan and fry the vegetarian chicken pieces for about 5 minutes. Add the pepper cubes and fry for another 3–4 minutes.
    4. Meanwhile, sauté the spinach in a large pan. It looks like a huge pile, but it wilts down a lot. Once all the spinach is cooked, squeeze it well with some kitchen paper; most of the moisture needs to be removed, otherwise the quiche will be too soggy.
    5. Now whisk the eggs with about half of the feta and the crème fraîche. Add pepper and salt to taste.
    6. Grease the baking tin with a little oil or butter and line it with the tart dough. Prick a few holes in the base.
    7. Spread the spinach over the base. On top of this goes the vegetarian chicken–pepper mixture. Now pour the beaten eggs over the tart and garnish with the remaining feta.
    8. Bake in the oven for about 45–55 minutes until nicely golden brown.

Tip!

When serving you can accompany the quiche with a light salad of mixed green leaves, cherry tomatoes and a simple vinaigrette. The freshness of the salad forms a perfect counterpoint to the rich flavors of the quiche. You can also cut the quiche into nice slices and serve as savory bites during a festive occasion.
