How fun is it to serve mini pizzas at a birthday or party? And of course not the frozen kind, but nice and homemade. I previously made a healthy gluten-free pizza and you can use that recipe for gluten-free mini pizzas. Optionally halve the amount of flour and you'll have mini pizzas. But I also wanted to share a recipe for mini spelt pizzas, for when you're not gluten-free but do avoid wheat, for example. These mini pizzas will really please everyone, so no fuss with multiple types of bases or flours.

Preheat the oven to 250°C
Add the olive oil and salt to the flour, then stir in the water little by little. If the dough becomes too wet, you can always add a little extra flour. You can also mix some dried herbs into the flour—about a teaspoon of basil, oregano and garlic powder, for example.
Knead the dough well by hand.
Line a baking tray with parchment paper. Make small, flat pizzas from the dough. Make sure the dough is no more than 1 cm thick.
Now mix the herbs into the tomato puree and add extra seasoning, pepper and salt to taste. Spread the tomato mixture generously over the mini pizzas. Top each pizza with some grated goat cheese.
Bake in the oven for about 10–15 minutes, until the mini spelt pizzas are nicely golden brown.
Let them cool slightly, then garnish with fresh arugula. Ready to serve!
