What do you do when you have some apples and strawberries lying around and fancy baking something a little healthier? Right — you try something new and end up with the delicious mini apple-strawberry crumble! Almost entirely guilt-free, because instead of sugar and wheat flour we use sucanat and spelt flour. Enjoy!

Preheat the oven to 180 °C. Peel the apples, remove the cores and cut them into small pieces. Put the apples together with the lemon juice, water and 85 g sucanat in a small saucepan and cook until a compote forms. Let everything warm up slowly until it starts to bubble. Then let it simmer for about 10 minutes: the apple pieces will soften and the flavours will meld.
Grease the baking dish with a little coconut oil and spoon the compote in when it's ready. Wash the strawberries, cut them into small pieces and spread them over the compote.
Crush the walnuts in a mortar or chop them finely with a large knife. Put the nuts in a bowl and add the coconut oil, spelt flour, the remaining sucanat and the cinnamon. Use your fingers to 'knead' it until a crumbly mixture forms: this happens quite quickly. So don't make a ball of the dough! Then it won't be a crumble anymore.
Spread the crumble over the compote and strawberries and place the dish in the oven for 45 minutes. The house will smell amaaaazing!

Are people coming over and you want to make a larger quantity? Double the ingredients and use a bigger baking dish, or several mini dishes!
