Mediterranean lunchbox with roasted vegetables, feta and bulgur

Ingredients

  • 150 g bulgur
  • 300 ml water
  • 1 red bell pepper
  • 1 small zucchini
  • 100 g feta
  • 100 g cherry tomatoes
  • 50 g pitted black olives
  • 5 tablespoons olive oil (divided)
  • 1 lemon (juice)
  • 1 teaspoon honey
  • 1 clove of garlic
  • 1 teaspoon dried oregano
  • salt and pepper to taste

How to make a Mediterranean lunchbox with roasted vegetables, feta and bulgur?

    1. Preheat the oven to 200°C (convection 180°C). Cut the bell pepper and zucchini into roughly 2 cm cubes. Larger pieces retain more moisture and shrivel less, so don’t cut them too small.
    2. Place the vegetables on a baking sheet, drizzle with 2 tablespoons olive oil and season with salt, pepper and dried oregano. Arrange them in a single layer so they roast rather than steam. Slide the tray into the oven and roast for 25 minutes, until the edges turn lightly golden.
    3. Meanwhile, cook the bulgur. Bring 300 ml water with a pinch of salt to a boil. Add 150 g bulgur, stir once and reduce the heat. Put a lid on the pan and simmer on low for 10 minutes. Turn off the heat and let the bulgur rest for another 5 minutes with the lid on. This helps it absorb all the liquid evenly.
    4. Make the dressing: mix 3 tablespoons olive oil with the juice of 1 lemon, 1 teaspoon honey, a crushed clove of garlic, salt and pepper. Whisk briefly with a fork until you have a smooth emulsion. The honey prevents the dressing from becoming too sharp from the lemon.
    5. Let the bulgur cool completely at room temperature before packing. Warm bulgur in a closed container draws moisture and becomes sticky. Spread it out on a plate to cool faster if needed.
    6. Divide the cooled bulgur into the large compartment of your lunchbox. Place the roasted vegetables on top and crumble the feta over them.
    7. Put the dressing in a separate small container or in the small compartment of the lunchbox. This keeps the bulgur dry and the flavors separate until you’re ready to eat. Add the dressing only at the moment of enjoying.
    8. Place the cherry tomatoes and olives in the second small compartment as a snack or extra topping. Close the lunchbox well and store it in the fridge until you head out.

The key to a good packed meal is temperature and separation. Let everything cool completely before you pack it, otherwise condensation can form and your lunch will turn watery. Always keep the dressing separate until the last moment, because as soon as lemon juice comes into contact with bulgur it starts to break down the texture. Want to make the lunch more nutritious? Stir a tablespoon of tahini into the dressing for extra protein and a nutty flavor. Store the filled lunchbox in the fridge for up to 24 hours for the best taste and texture.

You can easily swap bulgur for couscous (no cooking time, just pour on boiling water) or for quinoa if you want to go gluten-free. The roasted vegetables are flexible: eggplant, sweet potato or broccoli florets work just as well. No feta on hand? Grated aged cheese or a spoonful of hummus gives a similar savory bite. For a higher-protein lunch you can add a sliced hard‑boiled egg or some chickpeas to the large compartment. This recipe can also be doubled easily if you want to make it for two people.
