These should have been cinnamon buns / bolussen, but somewhere things went wrong and what came out of the oven… The photos say it all. But because the taste was really very good, I still wanted to share the recipe with you. So here is the recipe for these gluten- and sugar-free cinnamon buns / bolussen / drolussen.

Sugar-free Cinnamon Buns

Delicious for breakfast, lunch or dessert! Gluten- and sugar-free!

Ingredients

  • 150 grams almond flour
  • 4 tablespoons ground flaxseed
  • 2 eggs
  • 1 tablespoon melted coconut oil
  • 2 tablespoons sugar-free applesauce
  • 1 tablespoon cream of tartar baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt
  • optional: 2–3 tablespoons honey or maple syrup for the dough
  • 1 tablespoon cinnamon for the dough
  • 2 tablespoons cinnamon for the filling
  • extra honey for the filling
  • 50–75 grams extra gluten-free flour (buckwheat flour, rice flour, etc.)

Sugar-free and gluten-free cinnamon buns recipe

    1. Preheat the oven to 175 degrees.
    2. Put the almond flour, ground flaxseed, baking powder, baking soda, salt and the eggs into a mixing bowl and mix by hand or with a stand mixer. Then add the cinnamon, applesauce, coconut oil and optionally honey (which does contain a lot of sugar).
    3. Mix until a dough forms. It can remain quite sticky, but if it really stays too wet (as it did for me) add a little extra flour at a time. Form into a dough ball and put it in the refrigerator for 20 minutes.
    4. Flatten the dough with your hands on a piece of paper into a square or rectangular shape. Cut the dough into straight strips and drizzle with honey. Then sprinkle the cinnamon over it.
    5. Then carefully roll the strip by hand into a little roll. Cut these rolls in half (across the width) and place them on a baking sheet lined with parchment paper or baking mat.
    6. Bake for about 20-25 minutes until nicely golden brown. Serve on flat saucers, cake plates or optionally on breakfast plates.
    7. Enjoy your cinnamon buns! Also nice to serve at a birthday or just on a cold Sunday.

I found the inspiration for this recipe on another website. The cinnamon buns looked so good and the recipe was already completely gluten-free and sugar-free, so I just had to make it! But somewhere along the way it unfortunately went wrong, because the mixture didn't turn into dough. I added another 75 grams of self-raising gluten-free baking flour in addition to the almond flour, but it still wasn't easy to work with. Bummer! Maybe it was my almond flour, so if you make these buns I'd first try making the dough without the extra 75 grams of flour.

The cinnamon buns are really best on the first day, when they are just a little cooled from the oven. The day after they are no longer as crispy, so I recommend warming them very briefly in the oven (5 min – 175 degrees). After a short warm-up in the oven they're even delicious a few days later! Other tips I got were: 'Can't you make them in a muffin tin'? YES! 'Or just make them into cookies'? ALSO YES! Try it! Because actually anything is of course better than how they look now. But they are tasty nonetheless!
