Toast the pine nuts in a frying pan until golden brown and then let them cool completely, for example by spreading them out over the countertop.
Peel the garlic cloves and cut the cheese into cubes.
Put the garlic and cheese into the food processor and pulse until they are coarsely chopped.
Add the cooled pine nuts and pulse a little more.
Now add the basil leaves. Turn the machine on and slowly pour in the olive oil until you reach the desired consistency. You may need a little more or a little less oil.
Make sure not to run the machine longer than necessary: friction generates heat, which can make the pesto taste bitter.

Did you resist the temptation and have some left? Store it in a Weckpot for next time!
Store the pesto in a tightly sealed Weckpot in the refrigerator. Pour a layer of olive oil over the pesto to keep it fresh longer. This way the pesto will stay good for up to two weeks. You can also freeze the pesto in small portions so you always have a supply on hand.
