Homemade currywurst with spicy curry sauce

Currywurst is street food at its best: a juicy fried sausage topped with a warm, spiced tomato sauce and generously dusted with curry powder. Making it at home is easier than you think and the result is thoroughly delicious. Slice the sausage, spoon the sauce over it and serve with fries or a crusty roll. And for the full experience, serve this dish with an ice-cold beer in warsteiner bierglazen because that really completes the moment.

  • Chef's knife
  • Wooden spoon
  • Spoon or sauce bowl

Ingredients

  • 4 bratwurst (or fresh frankfurters)
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 tbsp tomato paste
  • 300 ml passata (tomato sauce)
  • 2 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • 1 tsp Worcestershire sauce

  • 1 tsp smoked paprika
  • Pinch of cayenne pepper (optional)
  • Salt and black pepper to taste
  • Splash of sunflower oil

How to make homemade currywurst with spicy curry sauce?

    1. Make the curry sauce: heat a splash of oil in a saucepan over medium heat. Sauté the finely chopped onion for about 3 minutes until soft and translucent.
    2. Add the garlic and cook for another minute. Stir in the tomato paste and fry for 2 minutes to develop the flavor.
    3. Add the passata, apple cider vinegar, brown sugar, Worcestershire sauce, 2 tsp curry powder, smoked paprika, salt and pepper. Stir well and let the sauce simmer gently on low heat for 15 minutes until it thickens slightly.
    4. Taste the sauce and adjust with extra vinegar or sugar to your preference. Blend the sauce smooth with an immersion blender for a nice, even texture.
    5. Heat a frying pan over high heat with a little oil. Fry the sausages all over until golden brown and cooked through, about 8 to 10 minutes. Turn them regularly.
    6. Let the sausages rest briefly on a cutting board, then slice them into pieces about 1.5 cm thick.
    7. Spoon the warm curry sauce generously over the sausage slices. Immediately sprinkle with the remaining curry powder and, if you like extra heat, a pinch of cayenne pepper.
    8. Serve immediately with fries or bread and put a cold beer on the table. That's how it's meant to be.

A good beer glass really makes a difference with a dish like this. Serve your beer in a nice glass of the right size and enjoy the complete picture. Quality is in the details, even at the table.

Currywurst is a dish to share, whether on a weeknight or at a relaxed BBQ. Make the sauce a day ahead: it tastes even better the next day. Store it covered in the fridge and warm it gently when you need it.
