Slice the cucumber and halve the grapefruit. Juice the grapefruit and put the grapefruit juice into a cocktail shaker, together with the cucumber slices, mint leaves and elderflower syrup.
Shake for about 1-2 minutes.
Pour the mixture into a pretty glass, top up with some crushed ice and then pour the tonic over it until the glass is full. Garnish with a sprig of mint, a slice of grapefruit and some rosebuds or pink peppercorns. Enjoy your mocktail!
