Gluten-free Speculaas Cookies

Since last year I had it on my list to buy: one of those cute wooden speculaas molds. You can easily buy these online and my parents just bought one for me. So sweet! Finally I could get started with a recipe for gluten-free speculaas cookies without refined sugar.

  • Rolling pin
  • Knife
  • Teaspoon

Ingredients

  • 150 grams rice flour
  • 100 grams almond flour

  • 1 1/2 tablespoons speculaas spice mix
  • pinch of salt

Gluten-free speculaas cookie recipe

    1. Preheat the oven to 150°C
    2. Mix the rice flour, almond flour, speculaas spice mix, baking powder and salt in a mixing bowl. Stir well.
    3. Melt the coconut oil until it's soft. Add the coconut blossom sugar and almond milk and mix well. Then carefully add the flour mixture and knead into a smooth dough (see photo below). Is your dough really too wet? Then add a bit more flour.
    4. Line a baking tray with parchment paper or use a baking mat.
    5. Dust some rice flour into a speculaas mold. Roll the dough flat and lay it over the mold. Press down with the flat of your hand. Don't press too hard into the corners, because then you won't be able to get the dough out of the speculaas mold.
    6. Then cut off the excess dough horizontally with a sharp knife. Turn the mold over, open side down, and tap gently on the speculaas board until your cookie comes out. If needed, gently help the dough out of the mold with a teaspoon, but take care not to damage the speculaas.
    7. Bake the speculaas cookies for 20-25 minutes and let them cool completely.
    8. Great as a treat or a tasty snack for the Sinterklaas celebration

I came across a recipe for speculaas cookies. I tweaked it a bit, because it originally wasn't gluten-free. And following the recipe didn't quite work for the gluten-free version, as I really needed more flour. Still, I thought these gluten-free speculaas cookies were a great success for a first try. They're very crispy and not crumbly at all. People with a sweet tooth might want to add a little more coconut blossom sugar, but I liked them as they were.

These gluten-free speculaas cookies are perfect for Sinterklaas or as a fun treat. Store them in an airtight jar to keep them nice and crispy. You can easily mix the speculaas spices yourself and keep them in handy spice jars.
