Sometimes you just want a breakfast that fills you up and tastes great straight away. This gratinated toast combines crunchy bread, tender ham, an egg and a golden layer of melted cheese. You need little to make it and it’s on the table within fifteen minutes. Exactly the kind of morning recipe you’ll make again and again.

Crispy toast topped with a slice of ham, an egg and melted cheese. Ready in fifteen minutes and good enough for everyone at the table.

Ingredients

  • 4 slices sturdy white or farmhouse bread
  • 4 slices cooked ham
  • 4 eggs
  • 80 g grated matured cheese (e.g. Gouda)
  • 1 tbsp soft butter or olive oil
  • Freshly ground black pepper to taste
  • Pinch of paprika powder (optional)
  • Handful of fresh chives, finely chopped

How to make gratinated toast with ham, egg and cheese?

    1. Preheat the oven to 200°C (top and bottom heat) or switch the grill on.
    2. Place the slices of bread on a baking sheet and lightly spread them with butter or olive oil.
    3. Top each slice with a piece of ham and fold the edges up slightly so the egg will stay on top later.
    4. Carefully crack an egg onto each slice, placing it in the center on top of the ham.
    5. Grate the cheese finely and distribute it over the toasts. Season with pepper and, if you like, a pinch of paprika powder.
    6. Slide the baking sheet into the oven and gratinate the toasts for 8 to 10 minutes until the whites are set and the cheese turns golden brown.
    7. Remove the toasts from the oven, sprinkle with fresh chives and serve immediately.

A good baking sheet really makes a difference here. One that distributes heat evenly gives a crispy base and a perfectly gratinated top. That way you never have to guess whether your toast is done.

Want to vary it? Replace the ham with smoked salmon or add a spoonful of crème fraîche under the egg for an extra creamy bite. This recipe is a great base to make every morning a little different.
