Budget recipe: Crispy chicken burger

You don't have to get a crispy chicken burger from a fast-food chain. At home it's easier and tastier, and costs a fraction of the price. The secret is the double coating: first flour, then egg, then breadcrumbs. That creates a crunchy crust that keeps the chicken juices inside. Serve it on nice dinner plates and you immediately have a meal that also looks great. This recipe is for everyone: quick on weekdays, fun at the weekend and budget-friendly always.

Equipment

  • Frying pan
  • Meat mallet or heavy pan
  • 3 shallow bowls
  • Kitchen paper
  • Kitchen thermometer
  • Cutting board
  • Knife
  • Tongs or spatula

Ingredients

  • 2 chicken fillets (approx. 150 g each)
  • 4 tbsp flour
  • 2 eggs
  • 100 g breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 150 ml sunflower oil
  • 2 burger buns
  • 4 tbsp mayonnaise
  • 4 iceberg lettuce leaves
  • 1 tomato, sliced

How do you make a crispy chicken burger?

    1. Place the chicken fillets between two sheets of plastic wrap and flatten them with a meat mallet or the bottom of a heavy pan until they're about 1.5 cm thick. This ensures the chicken cooks evenly and stays tender inside.
    2. In a shallow bowl, mix the flour with salt, pepper, garlic powder and paprika. Beat the eggs in a second bowl. Put the breadcrumbs in a third bowl. Having everything set up separately lets you work quickly and without mess.
    3. Dredge each fillet first in the flour mixture and shake off the excess. Then dip in the egg and let it drip off briefly. Finally coat with the breadcrumbs. Press the breadcrumbs firmly onto the fillet with both hands. The better the coating sticks, the crispier the result.
    4. Heat the sunflower oil in a large frying pan over medium heat to about 170°C. No thermometer? Drop a little breadcrumb into the pan. If it immediately starts to sizzle and bubble, the oil is hot enough.
    5. Carefully place the breaded fillets in the oil and fry them 4 minutes per side over medium heat. Never fry more than two at once. Too much chicken at once will drop the oil temperature and the coating will absorb fat instead of becoming crispy. After 8 minutes total the fillets are golden and cooked through.
    6. Place the fried chicken on kitchen paper to absorb excess fat and sprinkle immediately with a pinch of salt. Salt draws out moisture as it cools, so do this right away.
    7. Slice the burger buns in half and toast them briefly in a dry frying pan or under the grill. A toasted bun holds up better under the weight of the chicken and adds extra flavor.
    8. Assemble the burger: spread mayonnaise on the bottom bun, add a leaf of iceberg lettuce, then a slice of tomato, the crispy chicken and finish with the top bun. Serve immediately on a dinner plate.

The temperature of the oil is the key to this recipe. Too cold and the coating soaks up fat and goes limp. Too hot and the outside burns before the chicken is cooked inside. Around 170°C is ideal. Use the breadcrumb test from step 4 if you don't have a thermometer. Always press the coating firmly onto the fillet with your hands before the chicken goes in the pan. The better it sticks, the crispier the result. And always fry in small batches: two fillets at a time is the maximum for a standard frying pan.

Want to change the burger up a bit? Swap the mayonnaise for sriracha mayo (stir one tablespoon sriracha into the mayo) for a spicy kick. A thick slice of cauliflower works well as a vegetarian alternative with the same coating. Add pickles, red onion or a slice of melted cheddar for a fuller burger. Store leftover cooked chicken in the fridge for up to two days. Reheat briefly in a dry pan over high heat to crisp the crust again. The microwave works too, but you'll lose the crunch.
