Equipment

  • Cast-iron braising pan with lid
  • Cutting board
  • Sharp knife
  • Paper towels
  • Wooden spoon

Ingredients

  • 4 chicken thighs with skin and bone
  • 2 tbsp olive oil
  • 1 onion, sliced into half rings
  • 4 cloves garlic, sliced
  • 150 ml dry white wine
  • 150 ml chicken stock
  • 1 lemon, thinly sliced
  • 100 g green olives, pitted
  • 100 g black olives, pitted
  • 4 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • A handful of fresh parsley, finely chopped
  • Salt and pepper to taste

How do you make braised chicken with olives and lemon?

  1. Pat the chicken thighs dry with paper towels and season them generously with salt and pepper.
  2. Heat a splash of olive oil in the braising pan over medium heat. Brown the thighs skin-side down until golden, about 5 minutes. Turn and brown another 3 minutes. Remove the chicken from the pan and set aside.
  3. In the same fat, sweat the sliced onion over low heat until translucent, about 4 minutes. Add the garlic and cook another minute.
  4. Deglaze with the white wine and scrape the browned bits from the bottom. Add the chicken stock, the thinly sliced lemon, the olives, the thyme and the rosemary.
  5. Return the chicken thighs to the pan. Bring everything to a boil, reduce the heat and put the lid on. Braise the chicken 35 to 40 minutes on low until fully cooked and tender.
  6. Taste the sauce and adjust seasoning with extra salt, pepper or a squeeze of lemon juice. Scatter freshly chopped parsley over the dish.
  7. Serve straight from the pan with crusty bread, couscous or roasted baby potatoes.

A cast-iron braising pan is made for dishes like this. It holds heat, distributes it evenly and goes from stove to table without fuss. Exactly what you want when serving a one-pot meal that brings everyone together.

Tip: make a larger portion, because this dish is even better the next day. The flavors deepen and the sauce becomes richer. Warm it gently over low heat and enjoy it again.
