How to clean a pizza peel and prevent dough from sticking?

Scrape away dough residues while they’re still soft. Dried-on dough holds much more firmly.

Prevent dough from sticking

Dough mostly sticks to a peel when the pizza sits on it too long. Moisture from the sauce and the dough soaks through the layer of flour and the dough adheres to the surface. Top the pizza as quickly as possible, preferably within a minute or two, and give the peel a short shake back and forth before sliding the pizza into the oven. If one spot is stuck, lift the edge and sprinkle some semolina underneath. That prevents the pizza from partly sliding off the peel and leaving dough behind.

Wooden peel: dry cleaning

Clean a wooden peel immediately after baking, while residues are still soft. Scrape away loose flour, semolina and dough scraps with a dough scraper or a plastic spatula and brush the peel with a dry brush. Never soak a wooden peel in water. Wood soaks up water, swells and then can warp or crack as it dries. If something is still stuck, wipe it away with a well-wrung cloth and dry the peel right away.

Semolina works better than flour

Sprinkle a thin layer of semolina, cornmeal or rice flour on the peel before placing the pressed crust on it. These coarse grains act like tiny balls the pizza can roll over. Ordinary flour also works, but it absorbs moisture from the dough, becomes sticky and can burn in a hot oven and taste bitter. Use no more than you need: a teaspoon or two is enough for a 30-centimeter (12-inch) pizza. Any that falls onto the peel can be brushed off the pizza stone after baking.

Cleaning a metal peel

You can wash a stainless steel or aluminum peel with warm water, a little dish soap and a soft sponge. Don’t use steel wool or scouring pads, as they create scratches where dough can later catch. Burnt-on residues loosen if you place the peel under a damp cloth for 10 minutes. If your peel has a wooden or plastic handle, keep that as dry as possible and dry the peel immediately after washing. Check the packaging to see if your peel is dishwasher-safe; aluminum can become dull and gray in the dishwasher.

Wooden peel: never in the dishwasher

In the dishwasher wood is exposed for a long time to hot water, steam and aggressive detergent. A wooden peel then dries unevenly and can warp, split or become rough. If you have stains or an odor, sprinkle some coarse salt on the peel, rub it with half a lemon and then wipe it off with a lightly damp cloth. Let the peel dry upright. Rub a wooden peel a few times a year with a little food-grade oil or cutting board oil so the wood absorbs less moisture.

Store dry and upright

Only store a peel once it is completely dry. A wooden peel is best stored upright or on a hook so air can circulate on both sides of the wood. Lying flat in a cupboard on another peel or cutting board causes one side to dry more slowly and can lead to warping. Also avoid storing a peel right next to the oven or barbecue where it repeatedly heats up and cools down. You can hang a metal peel or put it in a drawer; just be careful the edge isn’t damaged, because a rough or burr-covered edge will tear the dough.

You use a pizza peel to put a pizza into and take it out of a hot oven or off a pizza stone. Wooden peels are nicest for topping a raw pizza because dough is less likely to stick to wood. Metal peels made of stainless steel or aluminum are thinner and therefore useful for lifting or turning a baked pizza. Both types last a long time if you clean them well after use and store them dry.

Whichever peel you use, the basics are the same: make a thin bed of semolina or flour between the dough and the peel, top the pizza quickly and scrape away residues immediately. A wooden peel must not go in the dishwasher or be soaked in water. You can clean a metal peel with warm water and dish soap. That way your peel stays smooth and every pizza slides off in one motion.
