White glühwein

Gepubliceerd op

White glühwein is the lighter, fresher sibling of the classic red glühwein. You make it with dry white wine, apple juice and honey, flavored with vanilla, cinnamon, cloves and lemon. The result is golden-yellow, soft and slightly floral, with the warm spices you know from the Christmas market. Nice if you find red wine too heavy, and a surprising alternative for a winter drinks gathering. A dash of calvados finishes it off.

Equipment

  • Cooking Pot
  • Sieve
  • Heatproof glasses

Ingredients

  • 750 ml dry white wine (1 bottle)
  • 250 ml cloudy apple juice
  • 3 tbsp honey
  • 1 vanilla pod, split
  • 2 cinnamon sticks
  • 4 cloves
  • 1 star anise
  • 1 untreated lemon, sliced
  • 1 apple, thinly sliced
  • 50 ml calvados (optional)

Prepare

  1. Put the white wine, the apple juice and the honey in a pan.
  2. Add the vanilla pod, the cinnamon, cloves, star anise and the lemon slices.
  3. Warm over low heat until it steams and let it steep for 15 minutes. Do not let it boil, otherwise the alcohol will evaporate.
  4. Add the apple slices in the last 5 minutes.
  5. Stir in the calvados if using, taste and add more honey if needed.
  6. Pour into heatproof glasses with an apple wedge and a cinnamon stick.

Which white wine should you use? Choose a dry, fruity white wine without oaky notes, such as a Riesling, Pinot Blanc, Grüner Veltliner or a simple unoaked Chardonnay. Wines that are too sweet will make the glühwein cloying, since you also add honey and apple juice. An expensive wine isn't necessary. Use cloudy apple juice: it has more flavour and gives a beautiful golden colour. Also nice with pear juice instead of apple.

Variations and non-alcoholic: add a few slices of fresh ginger for a spicy note, or a sprig of rosemary for a herbal, wintry aroma. For a festive version, pour the white glühwein into a glass and top up with a splash of crémant. Make it alcohol-free with equal parts white grape juice and apple juice, plus a splash of lemon juice.
