Tortilla Kebab Skewers from the BBQ

Grilled tortilla skewers filled with seasoned kebab, melted cheese and a fresh yogurt sauce. This is the BBQ snack everyone will want to repeat.

Ingredients

  • 4 large wheat tortillas
  • 400 g minced beef (or lamb mince)
  • 2 cloves garlic, finely chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 0.5 tsp chili flakes
  • Salt and pepper to taste
  • 2 tbsp harissa or chili sauce
  • 100 g grated aged cheese (or mozzarella)
  • 150 g Greek yogurt
  • 0.5 tsp garlic powder
  • Juice of 1/2 lemon
  • A handful of fresh mint, finely chopped
  • Fresh parsley for garnish
  • Lemon slices for serving

How to make tortilla kebab skewers on the BBQ?

    1. Mix the minced meat with the garlic, cumin, paprika, oregano, chili flakes, pepper and salt. Knead everything well together and let the mixture rest for 15 minutes so the flavors develop.
    2. Heat a grill pan or frying pan over medium-high heat and cook the seasoned mince for 5 to 6 minutes until done. Break the mince into coarse pieces while it cooks. Let cool briefly.
    3. Lay a tortilla flat. Spread a spoonful of harissa or chili sauce over it, spoon on a generous portion of kebab mince and sprinkle plenty of grated cheese over the top.
    4. Roll the tortilla tightly. Skewer the roll horizontally with a wooden or metal skewer so it doesn't unroll on the BBQ. Repeat with all tortillas.
    5. Heat your BBQ to about 200°C and set up for direct heat. Place the tortilla skewers on the grate and grill them 2 to 3 minutes per side until nicely golden and crispy. Turn them carefully with tongs.
    6. Meanwhile make the yogurt sauce by mixing the Greek yogurt with garlic powder, lemon juice, mint and a pinch of salt.
    7. Remove the skewers from the BBQ, optionally slice them on the diagonal and serve immediately with the yogurt sauce, some fresh parsley and lemon slices. Enjoy.
