Equipment

  • Baking mat
  • Citrus juicer
  • Pepper mill
  • Cutting board

Ingredients

  • 2 large sweet potatoes
  • 1 cauliflower
  • 2 red onions
  • 2 cloves of garlic
  • 2 sprigs rosemary
  • Juice of 1 lemon
  • 8 tbsp olive oil
  • Salt & pepper from the mill

How do you make cauliflower with sweet potato?

    1. Preheat the oven to 180°C.
    2. Clean the sweet potatoes well and cut them into cubes.
    3. Cut the cauliflower into florets. Cut the red onions into 8 pieces.
    4. Mix the bio extra vierge olijfolie in a small bowl with the pressed garlic, lemon juice and finely chopped rosemary.
    5. Spread the sweet potato, cauliflower and onion over the baking tray and toss with the oil/rosemary mixture.
    6. Place the baking tray in the oven for about 25 minutes (between 20 and 30 minutes — keep an eye on it to check whether the sweet potato is cooked).
    7. Stir everything at least once while baking.
    8. Serve on diepe borden. Fancy a glass of water with that?

This dish is lovely as a side or as a light meal on its own. The combination of sweet potato and cauliflower creates a nice balance between sweet and savory. The lemon juice and rosemary give it a fresh and aromatic note.

Make sure to toss the vegetables well while baking so everything cooks evenly and gets a nice color. You can also easily prepare this dish ahead by chopping the vegetables and preparing the oil mixture in advance.
