Although there have been the occasional shower and less pleasant days, the sun has been shining nicely over the past weeks. And when it's sunny I always crave cold dishes, like a fresh meal salad. Today I’m sharing a recipe for a Summer meal salad with salmon and potatoes, which is not only gluten-free but also sugar-free and dairy-free.

Summer meal salad with salmon and potatoes

When summer arrives and the sun is shining, it's time for a meal salad. No hot dishes for now, just something fresh!

Ingredients

  • 600 grams small cooked potatoes (can be left unpeeled)
  • 200–250 grams smoked salmon fillet
  • 400 grams green beans
  • 200 grams peas
  • 2 spring onions
  • 2 tablespoons capers
  • 2 sprigs chives
  • 1 tablespoon mustard (note: sugar-free)
  • 2 tablespoons mayonnaise
  • juice of 1 lemon
  • a few fresh mint leaves
  • salt and pepper

Summer meal salad with salmon and potatoes

    1. Boil the small potatoes or use pre-cooked potatoes. Also cook the green beans.
    2. Cut the salmon fillet into small pieces. Slice the spring onion into rings and finely chop the chives.
    3. In a small bowl, make the dressing from mustard, mayonnaise and lemon juice. If the dressing stays too thick you can add a little olive oil.
    4. Then mix the potatoes with the salmon, green beans, peas, capers, chives, spring onion, mint and the dressing. Season with salt and pepper to taste. Serve, for example, with a nice piece of grilled fish.

This summer meal salad is perfect for a warm day. The combination of smoked salmon, fresh vegetables and a refreshing dressing with mustard and lemon juice makes this dish both light and nourishing. Serve it at room temperature for the best result.

Want to make the salad a little more elaborate? Add a handful of arugula or some toasted pine nuts for extra crunch. This salad is also delicious as a side dish alongside grilled fish.
