Equipment

  • Food processor or immersion blender
  • Hand mixer
  • Baking tray
  • Parchment paper
  • Ice cream scoop or spoon

Ingredients

  • 130 g shredded coconut
  • 20 g almond flour
  • 3 egg whites (large eggs)
  • pinch of salt
  • 1 ripe banana

Sugar-free coconut macaroons

    1. Preheat the oven to 175°C
    2. Blend the banana with the shredded coconut, almond flour and salt in a food processor or with an immersion blender.
    3. Separate the eggs and whisk the 3 egg whites until they form stiff white peaks. If you turn the bowl upside down, no egg white should run out — that way you know they're firm enough.
    4. Gently fold the egg white foam into the coconut mixture.
    5. Line a baking tray with parchment paper and use an ice cream scoop (or a regular spoon) to form neat balls from the mixture until it's used up. Bake in the oven for about 15 minutes until golden brown.
    6. Enjoy!

These sugar-free coconut macaroons are a wonderfully light snack or dessert. The ripe banana makes them naturally sweet, without any added sugar. Perfect for anyone who eats consciously but still wants to enjoy.

Store the coconut macaroons in an airtight container in the fridge. They will keep there for up to three days. You can also freeze them for later use.
