Spicy noodles with scrambled egg, soy sauce and sesame oil. This is the dish you make when you're in a hurry but still want something tasty on the table.

Ingredients

  • 200 g egg noodles or thin rice noodles
  • 3 eggs
  • 3 tbsp soy sauce
  • 1 1/2 tsp sesame oil
  • 1 tsp rice vinegar
  • 1 tsp sriracha (more to taste)
  • 1 tsp honey
  • 2 spring onions, thinly sliced
  • 1 tbsp sesame seeds
  • Sunflower oil for frying
  • Pinch of salt

How to make quick spicy noodles with egg and sesame?

    1. Cook the noodles according to the package (usually 3 to 4 minutes). Drain and set aside.
    2. Meanwhile, mix the soy sauce, sesame oil, rice vinegar, sriracha and one teaspoon of honey in a small bowl. Taste and adjust to your liking.
    3. Heat a splash of sunflower oil in a frying pan over high heat. Beat the eggs with a pinch of salt and quickly scramble them until just set. Remove from the pan.
    4. Put the drained noodles in the same pan over medium heat. Pour the sauce over and toss everything well.
    5. Add the scrambled egg and gently fold it through the noodles.
    6. Divide between two plates and garnish with sesame seeds, sliced spring onion and optionally a few drops of extra sesame oil. Serve immediately.

A good frying pan really makes a difference here. You want high heat, quick response and nothing that sticks. With the right pan you cook the scrambled egg in seconds and the sauce clings nicely to the noodles. You notice quality even in simple dishes.

Want to make the dish a bit heartier? Throw in a handful of frozen edamame or thin strips of cucumber for some freshness and crunch. This recipe is also easy to tweak: more sriracha for extra heat, or a spoonful of peanut butter in the sauce for a creamier variation. Your kitchen, your taste.
