It has been a while since one of my best girlfriends came over for dinner and I scoured the internet for tasty inspiration. As you may already know, I'm crazy about pumpkin and I enjoy creating unconventional recipes with it. We all know pumpkin soup, but you can do so much more with pumpkin. This time we're making a pumpkin lasagne with goat cheese — not too many ingredients and nice and easy to make!

1. Preheat the oven to 200 degrees.
2. Finely chop the onion and garlic. Preferably work with a chef's knife and HACCP-compliant plastic cutting board. If desired, use a garlic press.
3. Heat the organic olive oil in the frying pan and sauté the onion and garlic until translucent. Then add the minced meat and fry until crumbly. Add the diced tomatoes and tomato paste together with pepper, salt and the Italian herbs.
4. Wash the pumpkin and cut it into the thinnest possible slices. You can use a mandoline for this; it makes thin slices easily. You don't need to peel the pumpkin.
5. Arrange the pumpkin slices in the baking dish. Spoon a layer of sauce over them and finish with more pumpkin. Repeat until your sauce is used up.
6. Melt the crème fraîche and goat cheese in a saucepan and pour this over the baking dish, smoothing it out.
7. Bake the pumpkin lasagne in the oven for 40 minutes until golden brown.
8. Let cool briefly and serve with a pie server on deep bowls. Store leftovers for the next day — delicious and already cooked for 2 days.

Pumpkin lasagne recipe
What a delicious pumpkin lasagne recipe, if I may say so myself! For this dish I chose goat cheese as a topping. Pumpkin and goat cheese have always been a great combination, but in this dish it's extra tasty. The sweet flavor of the homemade pumpkin slices combined with the slightly bitter-sweet taste of the melted goat cheese create one big taste sensation in this pumpkin lasagne recipe.
