Equipment

  • Rice cooker or saucepan
  • Sharp knife
  • Cutting board
  • Mixing bowl
  • Small bowl (for the marinade)
  • Poke bowl bowls

Ingredients

  • 300 g sushi rice
  • 2 tbsp rice vinegar
  • 1 tsp sugar
  • 0.5 tsp salt
  • 400 g fresh salmon fillet (sashimi-grade)
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sriracha
  • 1 ripe avocado
  • 1/2 cucumber
  • 6 radishes
  • 100 g shelled edamame (fresh or thawed)
  • 2 tsp sesame seeds
  • 2 spring onions, finely sliced

How to make a poke bowl with salmon?

    1. Cook the sushi rice according to the package instructions. Then rinse the rice with cold water and let it cool.
    2. Mix the rice vinegar, sugar and salt in a small bowl and stir until everything has dissolved. Fold this mixture into the still-warm rice and let cool to room temperature.
    3. Cut the salmon fillet into cubes of about 2 cm. Use a sharp knife and make sure the salmon is well chilled, which makes slicing easier.
    4. Mix the soy sauce, sesame oil and sriracha in a bowl. Add the salmon cubes and let marinate for 10 minutes in the fridge.
    5. Slice the avocado, cut the cucumber into half-moons and slice the radishes thinly. Shell the edamame if you’re using frozen edamame.
    6. Divide the rice among the bowls. Arrange the marinated salmon, avocado, cucumber, radish and edamame nicely on top.
    7. Sprinkle each bowl with sesame seeds and spring onions. Add a splash of soy sauce to taste and serve immediately.

Want to vary it? Swap the salmon for tuna or use cooked shrimp. For a vegetarian version, fried tofu also works very well. In any case, the sesame-soy marinade remains the flavor component that brings everything together.

A nice bowl completes this dish. Choose wide, deeper bowls so you can fit all the toppings neatly and the rice stays in place. That way your poke bowl is not only tasty but also beautiful to serve.
