Ingredients

  • 1 kg sweet potatoes, peeled and cut into pieces
  • 75 g arugula
  • 150 g soft goat cheese
  • 1 red onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 50 ml milk or cream
  • Salt & pepper to taste
  • Optional: a handful of walnuts or pecans, roughly chopped

Stamppot with sweet potato, arugula & goat cheese

    1. Peel and cut the sweet potatoes.
    2. Cook them in a pan of water with a pinch of salt for 15–20 minutes, until tender.
    3. Heat 1 tbsp olive oil in a frying pan.
    4. Slowly fry the red onion over low heat until soft and lightly caramelised.
    5. Drain the potatoes and let them steam dry for a moment.
    6. Add the butter and milk and mash into a smooth puree.
    7. Fold the arugula into the warm mash (it will wilt a little).
    8. Add the red onion and mix well.
    9. Crumble the goat cheese over and stir briefly so it melts slightly.
    10. Season with salt and pepper.
    11. Spoon the stamppot onto a plate.
    12. Sprinkle with a little extra goat cheese or walnuts on top.
    13. Serve immediately. The creamy sweet potato, peppery arugula and soft goat cheese make this a delicious comfort dish with a modern twist.
