Loaded fries with crispy chicken

Loaded fries are proof that simple ingredients can become something great together. You cook the chicken until crispy and golden in a good frying pan, and for that kind of work a cast-iron frying pan is ideal because of the even heat distribution. Pile everything on a mound of fries, add your toppings and place it in the middle of the table. Sharing is not required here, but it simply tastes better together.

  • 2 tsp smoked paprika powder
  • 1 tsp garlic powder
  • 0.5 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 egg
  • 2 tbsp milk
  • Sunflower oil for frying
  • 800 g frozen fries (thick steak fries)
  • 100 g grated cheddar

How to make loaded fries with crispy chicken?

    1. Cut the chicken breast into thin strips about 1.5 cm wide. In a bowl, mix the flour, paprika powder, garlic powder, cayenne pepper, salt and pepper. In a separate bowl whisk the egg with a splash of milk.
    2. Dip the chicken pieces first into the egg mixture, let the excess liquid drip off and then coat them in the seasoned flour mixture. Press it on well so the crust stays in place.
    3. Heat a generous layer of sunflower oil in a large frying pan over medium-high heat. Test whether the oil is hot enough by dropping a piece of bread into it. If it sizzles immediately, you can start frying.
    4. Fry the chicken pieces in batches until golden brown and crispy, about 3 to 4 minutes per side. Then place them on paper towels to drain. Do not fry too many at once so the temperature stays steady.
    5. Meanwhile bake or deep-fry the fries according to the package until they are golden and crispy. Use a small frying pan for an extra-crispy result in the oven if you prefer to do it that way.
    6. Spread the fries over a large platter or cast-iron pan. Immediately sprinkle the grated cheese over the hot fries so it melts. Then place the crispy chicken on top.
    7. Make the sriracha mayo by mixing sriracha and mayonnaise. Garnish the loaded fries with the sliced spring onions, jalapeños, sour cream, sriracha mayo and fresh coriander. Serve immediately.

A good frying pan makes the difference with crispy chicken. Choose a pan that distributes and retains heat evenly, so the chicken browns all around without one side burning while the other side is still raw. A set of frying pans in different sizes gives you the flexibility to have chicken and fries ready at the same time.

Want to customize the toppings? That works perfectly. Pulled pork, bacon bits, guacamole or a spicy cheese sauce all work well on loaded fries. This recipe is the perfect base to tailor completely to your taste. Put it on the table and let everyone build their own pile.
